Zucchini al dente pasta
This is a quick and delicious recipe for a side veggie dish, or a light lunch. There is no boiling water involved, or any heat for that matter! That’s because this is a raw food dish - or as your grandparent’s called it, food.

I use this $30 spiralizer to make these cute ‘noodles’, and then I use a food processor to make the marinara sauce. A sprinkle of olives on top is yummy, although adds to the salty taste of this dish. This recipe makes enough for 2 people as a side dish, or 1 large lunch!
Pasta:
1 Zucchini chopped in matchsticks or sliced with spiralizer
Marinara sauce:
1 fresh tomato cut into chunks
glug of olive oil
4-5 sundried tomatoes (soak in water for a few hrs if possible)
garlic + pepper to taste (no salt needed when using sundried tomatoes)
fresh or frozen basil to taste
